Sterilization of Beer
There are two common methods for sterilizing beer for kegging-flash pasteurization (see Figure 18.3) and sterile filtration. Both are done prior to packaging. The flash pasteurization system is considered more complex and requires higher capital investment than sterile filtration. It can lead to a flavor profile change if oxygen in excess of 0.05 mg/l (or ppm) is present during pasteurization or if over pasteurized.
